Can't believe that Christmas is over and it's almost 2014!!! Where did 2013 go? lol It is true - the older you get the faster life goes.
We had an awesome Christmas, ate too much as usual, but had fun doing it :) Now to figure out what to do with all the leftovers! I always freeze the leftover turkey, did send a bunch with the boys and hubby when they left to go back to their jobs. But I had all these leftover mashed potatoes! Now what?
Well - I decided to search Pinterest for "leftover mashed potatoes" and came up with this recipe.
Upside-Down Shepherd's Pie looked like a good place to start. For some reason I just can't seem to do some recipes exactly as they are written.... :) I decided to add some flavor to the meat by making it into Taco Meat, though I did still add onion, green pepper and corn. After it was all together I added the cheese and put it back in the oven on broil until the cheese melted.
I'm quite happy with the result. Shouldn't have to cook supper for a few days at least :)

Christmas Baking
So glad that Christmas is only once a year..... lol Not used to doing this much baking! We don't eat many sweets as a rule. My husband has a slight allergy to nuts, there are very few Christmas recipes that don't call for nuts! But since the kids are coming out and they don't do any baking (only get dessert when they are here), I thought I'd do some extra baking this year and give them each a container full to take back with them.
The other day I made Magic Cookie Bars and Tweeties. The Tweeties recipe was one that we got from an aunt many many years ago, close to 30 years ago! I have no idea where she got it, but it's really yummy :) Haven't made it in years and thought I would again. Here is the recipe:
TWEETIES
1/2 c. margarine
2/3 c sugar
1 c. mile
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c chocolate chips
2 stiffly beaten egg whites.
Cream margarine and sugar slowly. Add flour, baking powder and salt alternately with the milk. Fold in 1/2 cup chocolate chips and stiffly beaten egg whites. Bake at 350F for 25- 30 minutes; cool.
Middle layer:
2 egg yolks
1/3 c. margarine
1 1/2 c. icing sugar
Mix together and spread on cake.
Melt:
1/2 c chocolate chips
2 tablespoons margarine
Spread over top.
Allow to set and cut into squares.
NOTE: My pan is a little bigger than a 9x13, so I used 3 egg yolks and a bit more margarine and icing sugar for the middle layer. And about 3/4 c. chocolate chips and 3 tablespoons of margarine for the top.

What to do with leftover Lego?
Our oldest son played with lego when he was little. As he got older he switched to Knex. So we have this tub of lego that no one is using. (the boys are now 23 & 21 years old). Son1 suggested giving it to his cousin who is 10 and LOVES Lego, though I think he probably has every Lego piece made.... LOL
Went out for breakfast with my sister-in-law the other day and mentioned that we had all this Lego and I was thinking of making a picture frame. She suggested a lamp! So I purchased a lamp the other day, and yesterday afternoon spread all the Lego on the table and came up with this:
